Winter apple cake
Ingredients
4 apples
4 eggs
3 cups all purpose flour
1 ½ cups sugar
1 ½ cups corn oil
1 tsp baking powder
1 tbsp vanilla extract
1 tbsp cinnamon
Instructions
Allow ingredients to reach room temperature and when in room temperature, proceed with step no.2.
Butter the baking pan and leave it aside.
Preheat the oven to 180 Celsius.
Peel and cut the apples in small cubes. Put them in a bowl with water and half lemon juice.
In another bowl, stir together the flour, baking powder and cinnamon.
Using an electric mixer on medium to high speed and beat the sugar and the corn oil for 3 minutes. Afterwards add eggs one at a time and scrap the bowl occasionally while beating for 5 minutes or until smooth.
When the mixture of eggs, sugar and oil is ready, add the vanilla, stir well and then add the flour with the baking powder and the cinnamon. Stir again to combine all ingredients.
After straining the apples from the water, add them in the mixture and stir well.
Pour the mix in the buttered pan and bake for 50 min to one hour.
When done, let it cool completely and then add on top some icing sugar before serving.
