Greek cheese pies loved by big ones and little ones
Ingredients
200 ml lukewarm milk
1 tsp sugar
10 g dry yeast
400 g self-rising flour
1 tbsp salt
200 ml corn oil
2 eggs (1 for spreading)
200 g feta cheese
100 g Gruyere
1 tsp oregano
1/4 tsp sweet paprika
Instructions
1. In a bowl, dissolve the sugar and the yeast with the milk and leave it for 15 minutes aside (to activate the yeast).
2. Preheat the oven to 190 Celsius.
3. In a separate bowl, mix the flour with the salt.
4. Pour the corn oil in the bowl with the milk, then add the flour & the salt too. Mix with a spoon until all of the ingredients are completely combined and the mixture comes together nicely.
5. As soon as the dough starts to form, continue kneading by hand. The dough that is created is oily and elastic. Let it rest for 30 min. and then divide it in 5 equal balls.
6. In a bowl, break the feta apart with a fork, add the Gruyere cheese, one beaten egg, the oregano and the sweet paprika too. Mix until combined.
7. Sprinkle some flour on your working surface and place a piece of dough. Spread it out with your hands and then roll it out with a rolling pin until it is 25 cm in diameter. Divide equally in 8 pieces.
8. Place 1 tsp of the filling on each piece and fold/roll the dough towards the center.
9. Repeat the same process until all of the pieces of dough are filled.
10. Slightly beat the egg yolk with 1/2 tsp of olive oil, brush the tops and bake for 20-25 minutes or until golden.
